While Dong Ting Mountain is an old tea producing area dating back to the Tang Dynasty (619-907), Bi Luo Chun become very popular during the Ming Dynasty (1368-1644) and later a Tribute Tea during the Qing Dynasty (1644-1911). There are many stories about how this tea was named, but the important characteristics are the deep green color (Bi), the curled dried tea shape similar to a snail (Luo). In addition, this green tea must be harvested during the early spring (Chun), which results in its white feathery appearance.
Biluochun Tea is one of the ten most famous teas in China. It is locally known as "Fearful Incense" due to the strong aroma of the brew!
The technique for collecting tea leaves is very complex. Only the tender tip of the leaf is used for the tea making process. This part of the leaf should be no longer than one inch long and shaped like the tip of a spear. One tin of tea uses 60 thousand spears! It's no surprise then, that some of the finest Chinese teas are very expensive. The next step in the process is to repeatedly knead, rub and roll the leaves by hand. The Biluochun tea involves a particularly labor intensive process but the end result are leaves that are compact, tender and wonderfully fresh and aromatic.

Brewing Guide:
1. Generally use 4g green tea per 200ml (7oz) water.
2. The water temperature for brewing green tea should be around 80º C.
3. Pour the hot water over the tea leaves, and wait for about 2 minutes’ infusion.
